Is there any reason I can't solder the capacitor that came with my maple to the bottom of the board? I just needs to be soldered with + on VCC and - on ground, right?

You absolutely can do this. We nearly did it ourselves. Id recommend even getting a little surface mount cap and soldering it in between vcc and ground on the underside of the board.
