Does anyone know how much voltage can safely be applied to the lipo JST?
I'm hoping at least 5V or more...

Ehhhhh that circuit is really made to take 3.7V lipos, but the battery charging IC can technically deal with up to 7V on its output pin, so you'd probably be okay at 5V? No guarantees though. Also, obviously, the charger won't be able to charge it up all the way for you.
