One unique feature is that you can read and store
the contents of the present bootloader away before updating to
a new bootloader. It also allows you to store the fuse bits
away to a file.
Has anyone tried the FREE STM flash loader GUI on the Maple?

We usually interface with the built in bootloader (serial bootloader) via an open source script written not-by-us. See this: http://forums.leaflabs.com/topic.php?id=32 It works great and we've been using it to great effect for hotswapping bootloaders and accessing flash without JTAG.
ST has released some various windows only closed source tools. We used them long enough to stop using them ;)
In case you should run in to "ST Free DFUse loader"....the DFU is a lie. the "se" stands for "ST extended," but what it really means is "not DFU spec compliant" This is why we rely on the open source dfu-util from the openmoko project.
